WHY WE CALL IT KUROBUTA

"Kurobuta" is the Japanese name for this heritage breed, meaning "black pig." This designation refers to the Japanese program for pure-bred Berkshire pigs, with a feeding regiment designed for maximum marbling and a pH that retains juiciness (similar in concept to what they do with Wagyu cattle — aka Kobe beef).

The Kurobuta name is definitely something special. The hogs require more attention and more time. Not all Berkshire pork can be called Kurobuta.  Our 100% verified Berkshire bloodline Kurobuta pork is carefully raised to be the juiciest, most tender and flavorful pork.

Berkshire hogs have been raised for centuries with one goal in mind: flavor. A true heritage British breed, Berkshire hogs were once raised by the King of England on the grounds of Windsor Castle.

FLAVORFUL & JUICY

Berkshire hogs have unique characteristics that make the meat far superior on the plate.

Well marbled, the fat has a lower melting point so it melts in the mouth with a sweet, buttery flavor. The higher fat content means that Kurobuta pork is excellent for both long cooking and higher temperature cooking applications.

Their muscle fibers are shorter than other breeds, which makes the meat naturally more tender and gives it a smoother texture. Berkshire pork also has a higher pH balance than other breeds. This gives the meat a darker color, firmer texture and allows it to retain more juices, making it consistently moist & delicious.
