They’re usually slow-cooked to make them tender. These short ribs have been pre-sliced. Whole 5-rib slabs are also available. BUTCHER INFORMATION: Cut from the Rib Plate & Chuck primals. Cut across the bones (aka cross cut, kosher cut, flanken style). 5 ribs. COOKING/PLATING TIPS: Short ribs are a superb braising cut. Braise in a flavorful liquid until the meat is fork tender and ready to fall off the bones. Veal demi-glace is an excellent braising liquid base ingredient. If desired, the bones can be pulled from the cooked meat before service. Serve with some of the braising liquid (pureed if desired) as a sauce. MENU TYPE: Medium Price Point. BONELESS SHORT RIBS Short ribs are an economical, extremely flavorful cut that can be quite tender when slow cooked. This short rib meat has been de-boned for chefs’ convenience. COOKING/PLATING TIPS: Short ribs are typically prepared using slow-cooking methods that tenderize them, such as braising, slow-roasting or smoking. MENU TYPE: Medium Price Point. Boneless short ribs are packed with bold, beefy flavor that is welcome on a wide variety of menus. TRI TIPS Approx. 2-3lb The tri tip is a smaller cut from the Sirloin portion of the steer that can be used for roasting, smoking, or grilling. It offers excellent flavor at an affordable price point. BUTCHER INFORMATION: Cut from the Bottom Sirloin primal. Fully cleaned. COOKING/PLATING TIPS: Cook as a small roast, cut steaks or cubed/sliced for kebab meat, sautes, stir fry, etc. If preparing as a roast, slice thinly against the grain after cooking for optimal tenderness. MENU TYPE: Low to Medium Price Point. Tri tip offers excellent steak flavor at a more affordable roast cost. It can be utilized on any menu.
