Each striploin is close to one pound, making this an ideal serving size for two for shared plate entrees, or it can be sliced into medallions. BUTCHER INFORMATION: Cut from the upper leg/thigh. Fully denuded. COOKING/PLATING TIPS: Ostrich striploins can be broiled, grilled, pan-roasted or fried. Cook whole, or slice into medallions and sear or stir-fry. GROUND Ground ostrich meat is an excellent lean alternative to beef or ground poultry for use in meatballs, burger patties, meatloaf and other applications where ground meat is needed. Since ostrich is so lean, it can also be incorporated with ground pork, minced bacon or pancetta, or ground beef to increase the fat content. BUTCHER INFORMATION: 95–97% lean. COOKING/PLATING TIPS: Use ground ostrich to replace some or all of the ground beef in traditional recipes like meatballs, burger patties, meatloaf, lasagna, tacos or sauces.
