It can be used similarly to other ground meats in sauces & formed applications (meatloaf, meatballs, burgers, etc.) as long as its lower fat content is taken into account (see cooking tips below). COOKING/PLATING TIPS: Because elk is so lean, you may need to add extra fat (by blending in other meats or ground fatback) to keep it moist when using it for applications like burgers, sausage, meatballs, meatloaf, etc. Ground elk will generally cook more quickly than ground beef because of this low fat content. COOKING/PLATING TIPS: Elk tenderloins can be prepared similarly to beef tenderloins – roasted, sliced into steaks, or chopped for tartare. Because elk is so very lean, it will likely cook more quickly than beef, though this will be less pronounced in tenderloins, given how lean beef tenderloins are. Cooking no further than medium-rare will help protect the meat’s flavor and tenderness. Pair elk with traditional game meat-friendly ingredients like juniper berries, berries, and red wine. MENU TYPE: High Price Point. Elk tenderloins are a top shelf game meat cut and work well on European & fine dining menus. BURGERS 8oz Compared to other game meats, the flavor of elk is beefier, making elk burgers an ideal lean red meat alternative to beef.
