BUTCHER INFORMATION: Similar in size & shape to a chicken breast. Prick or score the surface fat prior to cooking so it can render out. COOKING/PLATING TIPS: Duck breasts are best when their fat is slow-rendered and then the meat is seared to just medium-rare. Pekin duck breasts can also be pan-roasted whole with the fat side down. During roasting, baste the breast with the rendered fat to keep the meat moist. Duck breasts can also be smoked. MENU TYPE: Medium Price Point. Most common on Chinese and Asian menus, duck breasts are also used in traditional recipes on French, European and fine dining menus. PEKIN LEG QUARTERS Approx. 8-10oz Traditionally used in confit, duck legs have a more robust flavor than breasts. BUTCHER INFORMATION: Leg-thigh combo. COOKING/PLATING TIPS: Duck legs are best prepared using slow-cooking techniques. They can be roasted or braised in a flavorful liquid or in rendered duck fat for traditional duck confit. Duck confit can be used hot or cold for entrees, appetizers and salads. MENU TYPE: Medium Price Point. Though duck is most often found on Chinese, French & fine dining menus, many other European & Asian cultures have traditional duck dishes. DUCK As water fowl, ducks carry most of their fat in an outer layer, allowing it to be easily trimmed or rendered off if the chef desires. However, duck fat is widely considered to be one of the most flavorful & luxurious fats available and helps the duck meat from drying out during the cooking process, so most chefs leave it on and drain off rendered excess to save for other dishes. Ducks are an all dark meat bird that can be served either hot or cold. • Most Commonly Farmed Duck in North America • Smaller Cuts • Milder Flavor & Leaner Profile than Moulard • Prized Breed in Classical French Cuisine • Larger Cuts Than Pekin • Richer Flavor Than Pekin • Thick Fat Cover • Hybrid Offspring of Muscovy & Pekin Duck Moulard Ducks (aka Magret) Pekin Ducks (aka Long Island Duckling)
