Because these birds offer fuller flavor than conventional chickens, lighter pairings & sauces allow their character to shine through. BUTCHER INFORMATION: Can be cooked whole or portioned/fabricated into legs, thighs and breasts. Each bird provides approximately two hearty servings or four light servings. The bones make excellent stock. The neck & liver are included. COOKING/PLATING TIPS: When roasting whole, first rub with oil & seasonings. Fill the cavity with citrus, garlic, shallots, herbs, etc for extra flavor.
